Malaga's cuisine: dishes, products, and Mediterranean roots

Seafood cuisine plays an important role in Malaga's traditional food. However, influences from other cultures have significantly enriched these dishes with Mediterranean roots, offering a much broader panorama with authentic flavors inspired by traditional products. 

Gastronomic experiences beyond flavor 

The diversity of locally sourced raw materials provides Malaga's cuisine with a range of flavors that goes from the simplicity of cold soups to elaborate dishes in marinade and pickle. All in all, the culinary tradition is so deeply rooted in this land that its dishes are part of the Malaga lifestyle. 

Eating skewers of grilled fish on the beach, enjoying wine by the glass in one of the traditional taverns, or sharing migas cortijeras (a traditional dish made with breadcrumbs) with friends are traditions as much as the recipes themselves. Many of these dishes are associated with special times of the year, such as summer vacations, Carnival, or Holy Week, and have their origins in customs that date back many decades. 

5 typical dishes of Malaga's cuisine 

1. Sardine skewers: these are the star dish at beach bars and are inextricably linked to summer. In fact, it is often said that the best months to eat this original dish of grilled sardines are those without the letter ‘r’ in their name. 

2. Porra antequerana: this cold soup is similar to salmorejo (tomato, garlic, bread, and olive oil), but with a slightly lighter texture. It is also eaten with hard-boiled egg and serrano ham, and is great for coping with hot days. 

3. Malaga-style fried fish: popular in any beach restaurant on the Costa del Sol, this dish is a selection of fresh seasonal fish (squid, red mullet, anchovies, etc.) fried in extra virgin olive oil with a very light batter. 

4. Chorreño or plato de los montes: this is a hearty dish that features prominently on the menus of restaurants in the mountains of Málaga (hence its name). It contains pork loin, breadcrumbs, and chorizo, and is usually accompanied by an egg, French fries, and green peppers. 

5. Tortas locas: this sweet emblem of Malaga's cuisine consists of two discs of puff pastry filled with custard, glazed with egg yolk, and topped with a red cherry.
